Oooh, one of the most reputable butters of France! Artisanal butter from an Origine Protégée and everything!


Founded in 1891, Echiré has been at the top of its game for over 100 years now. According to their website, their special oak barrels impart upon their butter a special flavour and texture that renders it world-renowned.


Their website is also a treasure trove of fun facts: Apparently it takes 2 hours and 30 mins to churn their butter! No wonder the price points are what they are.

Butter Evaluation


In which we discuss Echiré's unsalted butter.


We were extremely lucky and happy to find this beautiful little butter nugget here in Dubai. Even though we've spent time in Europe, we have never had the pleasure of tasting Echiré 'in the wild'.


All of that changed when we found it at Secrets Fine Food in Dubai along with other buttery treats! The packaging of this butter is unique - part of the branding, experience and traditional packaging of French butter. The fact that it comes is a little wooden basket is delightfully impractical and whimsical and gives the whole product an artisanal butter feel. It only fell out of our fridge thrice.


Upon unwrapping, the butter is matte, solid, stiff and a light buttery yellow. Devoid of gloss all the way though, it has excellent integrity and has that beautiful almost crumbly, stretchy quality so distinct amongst barrel- churned butters.


As almost all French butters are cultured or slightly fermented, the aromas from this has notes of cultured ferment but without the sharpness or tang. Apart from a vague rindy whiff to it, we find this one to be quite discrete on the nose.


In the mouth, this butter is a unique experience - at first it's extremely light and discrete - the richness develops over time as the butter warms. The tanginess of the ferments develop well on the tongue and coat the palate. It's not terribly buttery - it's more creamy and rich than anything, but without being fatty.





Final Rundown


This butter is very much worth its reputation. It is well-balanced, rich and creamy with a beautiful texture. When it comes to beurre de barrette and artisanal butter, this one is an excellent example. We can't wait to sample this one again!
